Here is my recipie for my peperoni meat sticks....may use beef. venison, elk or any other wild game...this recipie is for 1 to 1 1/2 lbs. of meat snacks.... INGREDIENTS.... 1 to 1 1/2 lbs of meat..I use a 50/50 % mix of ground venison and pork (the more fat the better..venison can be dry) 1 tbls crushed red pepper 1 tbls fennel seeds 1 tbls paprika 3/4 tbls mortons tender quick .....(per 1 1/2 lbs of meat used) ...(curing agent)... www.Mortonsalt (see online store)..... do not exceed unless you want your organs pickled... 1/8 tbls garlic powder...no more 1/2 tbls salt 1 tbls vegtable oil 2 tbls water natural hog casings for stuffing...sausage size about 1 1/4 inch around or you can use collagen casings PREPERATION..... grind meat in grinder (unless you purchased them ground already)....mix (in a plastic or stainless steel bowl) all above ingredients to your venison and pork mix....mixing by hand is a must ....make sure you get a good mix...once you have completed this , place you meat in a plastic 1 gallon freezer bag and remove all the air from the bag and seal...place in refridgerator to cure the meat for 18 to 24 hours..... COOKING...........once the mixture has cured overnight...stuff the mixture into you cassings (with a sausage stuffer or grinder) and place ( across the wire) on wire rack into your preheated oven (300 degrees ) for approx. 1 hour.. you will want to place some aluminum foil on the bottom of the oven to catch any drippings ..........also you do not want to have the stix touch each other during the cooking process....... use a meat thermometer to check the internal temp. of the peperoni.. you want to reach the internal temp. of 160 degrees.... you will notice the color to be a nice redish brown when cooked..... the meat will shrink to about 2/3 of the original size and be shriveled up some what.. remove snack stix from oven and let cool...keep refridgerated..... NOTE TO ALL REAL MEN...this is a semi mild peperoni snack stix recipe...real men may want to double the crushed pepper and add some cayanne pepper to the mix..play with the recipie to customize it to your taste.....

Left work last night in a snowstorm with it blowing snow so hard , top speed was 15 mph ....took me more than 2 hrs. to get about 3/4 of the way home when it happened......The drivers side wiper took a dump....found a parking lot to pull into(thank God there was one right there) hope that the arm just became loose...nope...right side works, drivers don"t.... it justs flops around.....called my son out in the storm to get me....sorry son...by the time he arrived the storm had passed...so my truck is in the shop being repaired today (at least I had today off)...and here I sit waiting for the ups guy to finish delivering the rest of the Christmas gifts I ordered , I need to go to the post office to send out some vr wraps.... . probably should shovel out the drive again (snowblower still broke, shoveled till 10pm last night)......and waiting to hear from my repair shop...Think I'll get another cup of coffee and wait for spring to arrive..I hate winter...maybe a bowl of ice cream will help ??:ICgrin::ICgrin:

You don't have to try to bring a pie all the way to Maintenance Day. The man is losing his mind..of course she does..........and I'LL check it out to make sure it's SAFE...........may have to water it down with ice cream though:big-grin-emoticon::ICwink::ICwink:

P/s did I mention I am going to be a GRANDFATHER ? ----My wife has been crying every 1/2 on the 1/2 hour The greatest thing about being a grandpa is being able to spoil the grandkids and let them do things that you wouldn't let their parents do right in front of them......that really ticks them off.....plus when their cranky or miserable, you can send them home so that mom and dad has to deal with them.......remember when you told your kids NO... now you can say YES to the grandkids all the time...ITS A WONDERFUL LIFE !!!!!! :banana:

I got to spend time with the kids and 9 grand childrem...Is it over yet...go home...lol.......I got a 8 gig. mp3 player with charger for the bike and wires to hook it into my aux. splitter, 11 1/2 inch screen aspire notebook ( thanks for the help) ,wi fi router for the house, clothes, stuff to make me smell better, new dvd player...boose, food, and a whole lot of other good stuff to play with.........Taters got a treadmill, a wii, new flatscreen for the bedroom...(I hate a tv in the bed room...but I gave in) ....she's been good this year.....and 2 stockings full of good stuff to pamper herself .....yes, we spoil each other....and the best gift is being able to share our day with you guys and gals...hope you all had a wonderful day as we did.... 0hh ,I almost Forgot a new 2 gallon ICE CREAM BOWL.......:rotf:

went to www.refurbdepot.com found like four models (for $255.00) of the aspireone....whats the difference between them????:doh:are they all the same????
