Well, it's never a good idea to mix radial and bias, but some people have done it. Mixing is going to make for funky handling characteristics but won't make the bike self destruct or anything. Just read the fine print on the tire side as to what type ply it is, usually it will tell somewhere. If the tire size has an "R" in it then it's a radial...

I've pulled a piggybacker for several years now with both the 1st and 2nd gen's and I forget it's behind me. Two things I've learned. It's wider than the bike, and going downhill it requires more distance to stop. I'm opening a can of worms here but I strongly recommend a swivel hitch...

Well if your odometer is working then nothing is wrong with the cable, etc. Your problem is with the movement itself, probably clogged with dirt or corrosion. You can try disassembling and cleaning out the movement with compressed air and alcohol but chances are there is another issue with it and it may need replacing...

Hamburger in Chili????? Oh! Chili Con Carne aka Mexican Chili. I make authentic Texas chili with chunks of beef pan seared with olive oil. I do not water down my chili either. I use tomato sauce, not paste and water. I use several different varieties of beans, drained, in my mix. Lately I've been using diced tomatoes rather than crushed. Plenty of onions too! Chili powder, cumin, red pepper, etc. Some times I add sliced green olives. It cooks in a crock pot on low all day...
